Q. Kanyana, last time we spoke you had so much news, with work underway to open FISK Signature and the announcement of your partnership with Louis Vuitton Moët Hennessy (LVMH). Have things calmed down a little since then?
A. Not at all! I’m delighted that, after a lot of work behind the scenes, FISK Signature is now open and welcoming customers. The cobbled streets of Harrogate’s Montpellier Quarter are especially charming at this time of year and we enjoyed meeting new customers visiting the area during the recent Christmas Market.
Q. Can you tell us more about the launch of FISK Signature?
A. We actually held two launch parties on consecutive nights in November and guests enjoyed Veuve Clicquot champagne as well as Belvedere vodka and a selection of Wynyates gins. We served canapés throughout the evening to a mixture of friends, local business owners and loyal customers. It was a great way to celebrate the opening of our third restaurant.
Q. How is business at FISK Signature, now that it is open?
A. It’s proving popular with town centre diners and visitors enjoying the charms of Harrogate. I think they like the selection of FISK’s signature dishes which we’re serving. We’re busy working on a revised menu at the moment which will be unveiled in the New Year and in the meantime we’ve been serving our Christmas Menu over the festive season. During this busy time it’s been fantastic to have two restaurants catering for our customers in Harrogate with both restaurants open seven days a week (FISK Prestbury is currently closed on Mondays). Over the Christmas break all our restaurants are closed on Boxing Day and New Year’s Day but other than that, it is business as usual.
Q. How are things over at FISK Prestbury?
A. The restaurant is proving really popular with lots of Christmas bookings. We enjoyed taking part in the recent Prestbury Christmas Market for the second time since we opened our doors there in 2017. We served a seafood barbecue which – although the weather was far from glorious – was well received by the visitors browsing the stalls and enjoying the Christmas attractions.
Q. What else has kept you busy over the last couple of months?
A. We finished off our series of Wine Club Dinners with the final events of the year held at both FISK Prestbury and FISK Harrogate over the last month. The festive dinner paired some of my favourite dishes – including Snow Fish Tempura – with a selection of fine wines, introduced by Patrice Lapitti-Mesme, our resident French wine expert. We’re looking forward to extending our range of dinners in the coming months.
Q. What are your plans for Christmas?
A. Well, it is our busiest time of year and, with three restaurants to look after, I’m sure this year will be busier than ever. I am looking forward to spending some quality time with my family though. We’ve been getting lots of enquiries about New Year’s Eve so it’ll be good to welcome the New Year in with our customers and raise a glass to achievements this year.
